This is tricky for me to answer in a vacuum.
If I’m a contender and this guy is gonna be my WR3 or 4, then I definitely want Boyd.
If I’m rebuilding, or I just have crazy WR depth & this guy is gonna be my WR6 or 7, then I’ll take the shot on Sutton developing into a WR1

As a Sutton owner I would trade him for Boyd straight up without hesitation. I like Sutton but Boyd has shown he can succeed in the NFL, to an extent, even with terrible QB play.

I can certainly see Sutton outperforming Boyd this year, but to call Sutton's floor Boyd's ceiling is a bit of a stretch in my view. I love me some Sutton as well.
