Have been offered this trade.

Give: 1.12 & my 2022 1st (I'd hope late)
Get: Ezekiel Elliott

Coming off the back of a championship win despite missing CMC and Barkley nearly all season, do I go for Zeke, or do I try and build the depth I am lacking and keep the strength going into the future?

I am also likely going to need to pick a QB up at some stage.

That’s a contender you got there. I’m not one to usually go for paying up to buy top RBs on their 2nd contract. (And on a personal note, I absolutely hate Elliot the player. Dallas, the “feed me”, the attitude and incidents all make a player I’d never own. But that’s a personal bias) However that price doesn’t feel bad, it’s fair. And would help your depth and lineup a lot. I’d go for it in this scenario.
Does he have Pollard as well? If so I would try to get him added in, even if you have to add a small value too. I’d view him as a top 3 handcuff and a guy I like owning even if you don’t have Zeke.

Unfortunately he doesn't have Pollard. Was the first thing I went and checked. Might try and pick up Pollard before accepting so the Pollard price doesn't go up

The value is solid in this deal for me. I think Zeke bounces back and has a year or two left with top 10 production and could help you overall. Congrats on the title and you should have another chance to make a run as long as your top two WR's stay healthy. Your WR depth is a bit questionable after those two, but hopefully Davis sees a heavy target share that drives his numbers up and Fuller stays healthy.

Two late 1st rounders will get you nowhere close to the generational talent that Zeke is. I too hate him as a character, but I'm making this deal all the same.
