Without knowing a ton about how the IDP players stack up against the offensive side of the league, I would take Mahomes and Jeudy here. Mahomes is the best asset in the deal and I expect Jeudy to keep growing.

Easy Mahomes, he's going to be a 20 year QB asset with little drop off as he ages. Jackson MAY develop elite passing as his legs fade but is more likely to become more average with a shorter career. That alone makes me do this immediately. Just makes the most dynasty sense.
