We keep five. I'm already keeping Mixon, Godwin, and Golladay. I can keep two of the three above.
Some thoughts:
Our starting lineup is 1QB, 1RB, 3WR, 1TE, 1RB/WR/TE flex. This makes it a WR heavy league. PPR scoring.
Also, I'm drafting 6th. Notable WRs that were already dropped are Ridley, Boyd, McLaurin (and I'll be dropping Gallup).
If I drop Dak, four of the five in front will already be keeping a QB, so unless someone trades up he might be there if I wanted him.
If I drop Sutton, I absolutely have to take a WR at 6 because I can't have just two through six rounds in this format. It would make drafting one of the RBs difficult. Looking at it as thought it was a redraft, it would be that situation where if you go early TE you have to wait on QB and vise versa.
If I drop Ertz I have options to take all three positions.
I've changed my mind constantly. I expect Ertz to have a huge year because the likelihood of Jefferey and Jackson playing a full season between them is almost nil, and this year particularly rookies will be behind the curve. I think Dak is set up for a monster year for the obvious reasons. I think Sutton has the highest long term ceiling but I'm not a patient owner. In my dynasty teams I'm always the win-now guy with the oldest players.
I'm curious what you all think. Although I have a rule that I always like to go by which is ... break all ties based on which player whose team you're more likely to root for. When the FF season is over we still have football to watch. If I follow my own rule I'd end up dropping Ertz.

Re: Dak, Ertz, or Sutton ... drop one
I'm not as optimistic about Sutton as most, so I'd be okay dropping him. But, given your format and the pressure that you find in your league to hold on to WRs, then I would comfortably drop Dak.

Would drop Sutton
Re: Dak, Ertz, or Sutton ... drop one
Because of the starting requirements, I'd probably hang onto Sutton. I'd hate to feel forced into taking a wr with your first pick.
Is this a 12 team league? If so, I'm okay with taking a chance on letting Dak go and picking up a QB later - I seldom pick QBs early, though.
Also will let TEs fall... but it's harder to find a good starter there than at QB in 10 or 12 team leagues, so I would consider keeping Ertz.
So, I'd be leaning towards cutting Dak.
Good luck! -oo-

Thanks all. I appreciate it. Cut down day is tomorrow. I’m starting to think that dropping Dak allows me a lot of options, including rookies and veterans. As big a fan I am of Dak I think I’ll let him go.
