I think you are being Punk'd with the 2nd one.
The first one is a good value if you are looking to move Burrow. I'm not a Higgins fan, so for me the big upgrade to JJ may be worth the downgrade from Burrow to Watson+1st. All depends on team makeup. Can you afford to give up Burrow?

Seems like a solid move to me. You'd still have Jackson, Goff, and Watson at QB to go along with the best WR squad(I assume) in the league.

I get that too. Just because you trade for him doesn't mean you can't turn around and shop him back out. The issue I have with the 2nd trade is that Stafford is a very short term bandaid for a roster and you likely will not get value back from him. That 1.03 (Maye, Daniels?) busts and you basically just gave a young top 5 QB away for free.
The first trade you know you come away with the top WR asset in dynasty, and two marketable pieces in Watson and the 1st.
