Startup Draft Pick Trading

I am in my first startup draft in some time and its fairly competitive. 12 SF/TE Premium, Veterans only. Rookie draft is separate, snake, reverse order of Startup. I started in the 1.07 slot. Here is what i have done so far.
1.07 Traded down
2.01 acquired - Nick Chubb
2.06 - Dak Prescott
3.07 - traded down
4.01 - Courtland Sutton
4.06 - Carson Wentz
5.02 -Traded up - DJ Chark
7.07 - Derrius Guice

Remaining.
9.07, 10.06, 11.03, 11.07, 12.06, 12.11,14.06, 15.07...alternating 6 and 7 pick rest of the way through round 30)
Draft picks: all of mine + 2020 2nd round (2.12) + 2021 1st round. I was able to acquire in some other trades and additional 2nd in the 2020 draft (2.12) and additional 1st rounder in 2021. it seems that all the value in this draft (not sure if this is normal) is falling in the 6-8 range where i have only 1 pick. It seems almost every pick is on OTB when it is on the clock and is almost always traded to someone else (even if i am in negotiations).

Does anyone know of a good method for gauging value. I feel like i am not having a great draft but won't have the full picture until after the rookie draft.
