I am bringing this up because last year MFL would not change Ty Montgomery from RB to WR because the Packers still had him listed as a WR. AZ currently has Ellington listed as a #2 RB.

Last year Montgomery made the switch mid-season. Ellington is switching in offseason. This isn't really much of a question...seems more like sour grapes. And yes, I own Ellington (and DJ).

WR since he's now a WR. The final position change is like the end of preseason. If he's switched back to RB after that point, he'll still carry his WR tag until next year.

My issue has more to do with MFL-10.
Last year MFL said they would not consider the change until GB made the change. AZ has not officially made the change and MFL has.

Arizona has made the change. Their coach has come out and said he's a WR going forward. Their website is unlikely to change until mid-preseason because what is the point. MFL uses Rotoworld, which will update more frequently to reflect the notes changes, and then MFL will flow through accordingly. MFL does not make changes mid-season though.
If you do an MFL this early, you're acknowledging and accepting these types of potential changes, just he same as player loss of value due to draft picks, injuries, or roster movements.
