Dude is 2 years into a 5 year deal and his performance, if anything, has declined slightly since he signed. Why exactly does he feel he's in line for a new deal?

Seems like he needs to manage his expectations. That's how things work. The guys who signed most recently get paid the most.
These guys want the security of a long-term deal, but they want the freedom to sign a new contract of a short term deal. You can't have it both ways. Julio made his choice. If I were the Falcons I would tell Julio to pound sand.
Maybe this will help people make sense of why Le'Veon wasn't willing to lock himself up for basically the last contract of his career for a little bit more guaranteed money than he gets this year anyway.

Julio is just upset. He want's to be the highest paid WR. The NFL doesn't work that way. Just like A. Rodgers he isn't the top paid anymore.
In 2015 he signed a huge at the time contract for 71 Plus Million with practical guarantees of 47 Million which is still tied for the 3rd largest ever.
However there has been plenty of recent contracts; (7) I think that pay out more money on a per year basis which is really a function of 2017 and 2018 contracts.
Dude is butt hurt for no real reason other than ego.

Why the hell do these guys sign contracts that are any longer than the guaranteed money? Like if this was a 5 year 80 million deal with $30mil guaranteed over the first two years, just sign for two years. Is there a benefit I'm overlooking? The team can just cut you once they're beyond the guaranteed money and if they don't you are likely playing for less than current market value.

The team is probably willing to pay more guaranteed if you agree to sign for longer. Yah, but teams aren't in the habit of guaranteeing 100% of contracts. Not for multi-years anyway. Unless you're Kirk Cousins that is.
If Julio is smart, he'll take the falcons up on their "wait 'til next year" offer. By then, OBJ will have reset the top end WR market closer to $20 mill / year. And his $14.2 mill a year will seem paltry by comparison.

The premise that teams want to cut players is really backwards. They want to keep them provided they can play. If not then they may cut them depending on the cap hit.
The link I posted early lists the actual hard guarantee but also the practical guarantee which for all practical purposes will happen.
There is also ego in play. Julio signed the largest contract ever for a WR a few years ago. that big number matters plus they will earn 100% of it they remain productive.

Coming off a 3 TD season. LOL. As the cap continues to go up, this is becoming more and more of a problem. At the time the deal was signed, it was very lucrative. GM's are going to have challenges as this seems to be a situation that is occurring more ofter.

Can't believe so many here are so dismissive and insensitive to Julio Jones' motivation. All the man wants to do is make sure he can feed his family! Food on the table, a solid roof over their heads, etc.

His window to get another lucrative deal is shrinking. He has 3 years left on his contract w/ none(?) of it guaranteed, so he's not a UFA until he's 32, after the 2020 season at which point the CBA expires and there could be a lockout.
OBJ right now is at the same point that Julio was back then. If anything, OBJ should look at these deals where elite players are getting nearly the entire contract guaranteed instead of looking at a huge deal attached w/ a whole bunch of back loaded funny money
