So I want to pick up Dexter McCluster. He is listed as a rb/wr and I was wondering if he would count to the 8rbs i can have or the 8wrs I can have, or both?

Either or, whichever you would have room for but not both. If you can have 8 max and you had 7 of each you could add McCluster and then add a wr or rb as well and he'd just slide into whichever position you had room for.
